What are some unique camping meals to make?

June 12, 2009

I am going camping this weekend – only have a propane table-top grill and the campfire to cook on. Any suggestions beside the usual hamburgers and hotdogs ? Thanks.
Wow – I already love all the great ideas!

meat…beef steaks, pork steaks, pork chops, ham steak, chicken pieces or breasts, take along BBQ sauces (I like Sweet Baby Rays) prepackaged Lipton sides (rice or pasta) fresh corn on the cob, you can also make foil packages…potatoes, onions, Italian dressing, salt/pepper and garlic powder and butter…seal and place over fire, take along a boiling pot, mix some eggs in a zip lock bag and boil…its an omelet in a bag….there are lots of stuff you can do with a little planning ahead of time to minimize dish washing and preparation

You may have to take some canned or freeze dried foods with you. Pasta is always one of my favorite at the camp site.

PS – when I was much younger we used to take cans of Dinty Moore(?). Does this stuff still exist?

If you're ambitious…before going marinade some veggies and chicken and make kabobs!! Just stick them in some tupperware then in the cooler and they're ready to go when you are!!

I like, bell peppers, onion, mushrooms, tomatos!! Put whatever you like on it and play with the colors…maybe a red onion and an green bell pepper!

We camp all the time and rarely ever have hamburgers and hotdogs. If you can fix it in the house, you can fix it outside the house. We have shrimp, crab legs, crab cakes, Steaks, all kinds of soups, roasts. I have all the propane gadgets, but rarely use them. I love cooking over open fire, nothings better. If hubby would build me a fire pit at home I would probably cook outside all the time! You can bake cakes, biscuits, cornbread, muffins, cookies… all sorts. You don't need any special recipes… Just go for it.

We always ake MRE's with us. They're quick, tasty (depending on which ones you get), don't require cooking and each one is a complete meal. You can throw one in a backpack and go for a longer hike in the woods because you don't have to go back to eat…and they all have toilet paper in them too.

Grilled Cheese sandwiches would be easy, or fried Bologna sandwiches. My mom use to make those when we went camping.

you can marinate some chicken breasts or the boneless, skinless thighs with soy sauce mixed with ginger and garlic, and then grill that. you could use a vinaigrette salad dressing to marinate some chicken. you could grill some fruit, halve them, brush with some sweetened, condensed milk, and place cut side down on the grill for 3-5 minutes… delicious!

corn on the cob is awesome over the fire. make sure the husk is damp, (leave the husk on), and throw on the fire (for about 15 min), it gets nice and roasted, plus the corn hairs come right off when you peel the husk! steaks are also good over the fire, do you have a grate or something to throw over the fire to cook on? also love to make eggs for breakfast, and toast over the fire is so yummy. have fun.

I've cooked chicken fajitas once on our table top grill.

I can give you a great smack idea though, my son introduced me to these:

"Cat Tails"
1 package croissant dough ya know the stuff in the tube that you have to twist open (Pillsbury or what ever)
Butter
Cinnamon & Sugar Mixture

Cook the croussants over the fire, when they're done to your liking smother them in butter then sprinkle the cinnamon and sugar all over them. Better than smores and you can eat TONS of 'em. Have fun!

As a previous answerer answered…anything you make at home, you can make while camping. We just came back from a camping trip and one of the meals we did was using a box of one of the new Kraft Pasta Salad and added some canned tuna. It is a mayonnaise based pasta salad, but we used Light Miracle Whip. Turned out great. Also, we had some grilled chicken basted in Dale's Sauce. Another idea is if you have a cast iron pot…put in some hash browns, cubed ham, and some green beans…mix it up, and cook it over the camp fire…makes a great casserole.

This is a recipe I got from my cousin and she called it "slop".

Ingredients:

1 to 2 large potatoes cut up
butter
sausage
3 to 4 eggs
salt
pepper
shredded cheese
1 disposable metal pan

Directions: Clean and cut up potatoes and place in foil (fold foil like a pocket), add butter and place on a rack above camp fire. Let cook until potatoes are soft. Once potatoes are soft place them in your disposable metal pan. Add uncooked sausage, eggs, salt, and pepper. Place back on rack and stir until eggs and sausage are done. Sprinkle with shredded cheese.

I will admit it doesn't look that pretty but it does taste good, it's fairly simple to make and the clean up is almost non existent.

before we go i make up little meatloaves, the size of hamburger patties and take them, i put catsup on them and wrap them in foil and cook them in the coals, along with potatoes rubbed with olive oil and wrapped in foil at the same time, add some ears of corn either soaked in water and wrapped in foil, or rubbed with olive oil and wrapped in foil, it all cooks in the coals and its a delicious dinner……..fish and veggies, a little herbs and wine wrapped in foil is also great on the fire, keilbasa, or italian sausages, potatoes and onions are also great over a camp fire, serve it with a spicy mustard, yummy

I love fresh corn on the cob, You can cook it in the hulls and the silk or you can take it out of it. If you do take it out of the hull wrap it in some aluminum foil with butter and a little salt and wrap it god and stick it on the grill or camp fire that is good.

Okay here's a dessert or breakfast suggestion that's not a sweet as smores

You'll need a pan with a tight lid (saucepan or dutch oven if you want to cook on the fire)

1 large jar applesauce, 1 package muffin mix (coffee cake, cinnamon, or gingerbread go particularly well with the applesauce). Best to get a brand that *doesn't *require an egg* unless you plan to bring them.

Mix up package mix with water or milk only, *don't * add the oil or shortening, just add a bit of extra water if it calls for oil (and actually, you can skip the egg, but the texture isn't as good, which is why you wanna get the mix with egg already in it). Regular muffin batter consistency is fine, but err on the thick side.

Pour in applesauce, then spoon muffin mix on top. Heat to simmer, and cover tightly. The cake will steam to cook and will have a bit of a dumpling texture when done, and the apple sauce keeps everything moist.

Get out your runcible spoon and enjoy :)

Taco Soup

1 Pound Hamburger (Minced Beef)– Browned & Drained
1 Pack Taco Seasoning
1 Can Ro-tel Tomatoes (has jalapeno in it)
(can is the size of a Campbell’s soup can)
1 Can Dark Red Kidney Beans
1 Can Corn – Whole Kernel
1 Can of Water

Mix together & cook until it looks/smells done – although everything is already cooked – so you COULD eat it as soon as it gets hot. You can also put it in a crockpot/slow cooker.
(After you make it with the recipe one time to see what it is like – the next time you can also add carrots, peas, white beans, pinto beans, potatoes – just any vegetable you like best.)
After you put it in your bowl – taste it, it is great that way and less fattening – then put a big blob of sour cream in it and mix it up – then taste it again.
Garnish with black olives, cheese, onions, chives – whatever makes you happy.
I multiply the recipe (using less meat and more corn – just a personal preference) and freeze containers of it to pop in the microwave to thaw and heat later.
